Jamix Helped In the Development of Plant Foods for Climate Recipes

The Plant Food for Climate campaign is shifting  the food services in Finland towards a more plant-based and climate-friendly direction. The campaign offers food services comprehensive support for increasing plant-based meals, including ready-made recipes, customer communication materials, and information on plant-based foods.

The campaign was established in 2019, when the first recipes were also published. In 2023-2024, new recipes were developed and published in August 2024. Jamix has been a partner of the Plant Food for Climate campaign from the beginning, and the JAMIX Kitchen Intelligence System has been utilized in recipe development.

The Carbon Footprint of Plant Food for Climate Recipes Is Less Than One-third Of an Average Meal

The focus in recipe development was not only on climate-friendliness but also on nutritional quality, taste, appeal, scalability, and functionality in large kitchens. The recipes are designed for food services, and their development was managed by a professional team, including a chef, nutritionist, and environmental expert.

“The carbon footprint of the Plant Food for Climate recipes is, on average, 0.3 kg CO2 equivalent per serving. This is well below one-third of the carbon footprint of an average Finnish meal. It is also in line with recommendations such as those from WWF,” says campaign manager Katri Loikkanen, adding, “The recipes are nutritionally complete and in line with dietary recommendations.”

The recipes were tested in collaboration with professional kitchens to ensure their taste, appeal, scalability, and functionality in large kitchens. Feedback was collected from both kitchen staff and restaurant customers, and the recipes were further refined based on the feedback received.

The JAMIX System Facilitated the Development Process In Many Areas

JAMIX Kitchen Intelligence System was used as a tool in recipe development. The developer entered the recipes into Jamix, where the entire campaign team could review the recipes and any changes made. Nutritional information for the recipes was also obtained directly from Jamix. Additionally, it was easy to print the recipes with the desired portion sizes for each partner restaurant.

The Jamix system eased the development process in many ways, as it provided  nutritional calculations based on the Finnish Fineli database. In addition, the servings functionality allowed for reviewing nutritional values as part of the entire meal. “Without Jamix, calculating and checking nutritional values would have been much more labor-intensive. In Jamix, it’s easy to adjust the portion size. When you modify one ingredient, it automatically changes in all the recipes where you have used it. Overall, Jamix made the recipe development and nutritional value checking process easier,” says Katri Loikkanen.

Plant Food for Climate Recipes Are Available Online And In JAMIX G6 System

The Plant Food for Climate campaign’s website hosts a recipe bank, featuring 59 delicious and responsible main course recipes, as well as side dish and dessert recipes.

In Finland the recipes are also available in the new JAMIX G6 system, where food services can easily scale the recipes to suit their needs and effortlessly generate ingredient lists for purchasing.
